Ingredients:

  • 12 sheets phyllo dough (thawed)

  • 1 cup crumbled feta cheese

  • 2 cups fresh spinach (cooked and drained) 

  • 2 eggs (beaten)

  • 1/4 cup butter (melted)

  • 1/4 tsp garlic powder

  • Sesame seeds (optional for garnish)

Instructions:

  • Preheat oven to 350°F (175°C).​

  • In a bowl, combine cooked spinach, crumbled feta, beaten eggs,  garlic powder. 

  • Lay one sheet of phyllo dough on a clean surface & brush with melted butter. Fold into thirds lengthwise to create a long strip. Place a spoonful of the spinach-feta mixture at one end & fold dough over in a triangle shape. Repeat with remaining dough & filling.

  • Place triangles on a baking sheet, brush with butter, sprinkle with sesame seeds. Bake for 20-25 minutes until golden brown.

  • Serve warm, garnished with fresh herbs.

Roasted Brussels Sprouts with Feta & Cranberries 

This savory & sweet combination is perfect as a side dish for any meal.

Ingredients:

  • 1 lb brussels sprouts (halved)

  • 2 tbsp olive oil

  • 1/2 cup crumbled feta cheese

  • 1/4 cup dried cranberries

  • 1 tbsp balsamic glaze

  • Salt and pepper to taste

Instructions:

  • Preheat oven to 400°F (200°C).

  • Toss brussels sprouts with olive oil, salt, pepper. Spread on a baking sheet & roast for 20-25 minutes, until crispy & browned.

  • Transfer roasted brussels sprouts to a serving dish, sprinkle with crumbled feta & dried cranberries.

  • Drizzle with balsamic glaze and serve warm.

Ingredients:

  • 4 cups mixed greens (arugula, spinach, or baby kale)

  • 1/2 cup crumbled feta cheese

  • 1/2 cup pomegranate seeds

  • 1/4 cup pecans (toasted)

Ingredients:

  • 1 sheet puff pastry (thawed)

  • 1/2 cup crumbled feta cheese

  • 1/4 cup sun-dried tomatoes (finely chopped)

  • 1 egg (beaten, for egg wash)

  • 1 tbsp fresh basil or parsley (chopped, for garnish)

  • Sesame seeds (optional for garnish)

Instructions:

  • Preheat Oven: 400°F (200°C).

  • In a bowl, mix crumbled feta and chopped sun-dried tomatoes.

  • Roll out the puff pastry & cut it into strips about 1 inch wide by 6 inches long.

  • Spoon a little feta & sun-dried tomato mixture down the center of    each strip. Twist the strips into a spiral.

  • Brush the pastry twists with beaten egg & sprinkle with sesame seeds if desired. Bake for 15-20 minutes, or until golden brown.

  • 2 ripe avocados

  • 1/4 cup crumbled feta cheese

  • 1/4 cup pomegranate seeds

  • 1 sheet puff pastry

  • 1 cup crumbled feta cheese

  • 1 cup spinach, cooked and drained

  • 1 egg, beaten

Instructions:

  • Preheat the oven to 400°F (200°C).

  • Roll out the puff pastry and cut into triangles. Mix the cooked spinach with crumbled feta.

For a hearty family dinner, try this stuffed roast leg of lamb with feta

Ingredients:

  • 1 boneless leg of lamb (about 4 lbs)

  • 1 cup crumbled feta cheese

  • 2 tbsp fresh rosemary, chopped

  • 2 tbsp fresh parsley, chopped

  • 4 cloves garlic, minced

  • 2 tbsp olive oil

  • Salt and pepper to taste

Instructions:

  • Preheat the oven to 350°F (175°C).

  • In a bowl, mix feta, rosemary, parsley, garlic, olive oil, salt, pepper.

  • Butterfly the lamb leg & spread the feta mixture evenly inside.         Roll it up & secure with kitchen twine 

  • Roast for 1.5-2 hours, until the internal temperature reaches 145°F (63°C) for medium-rare.

  • Let it rest for 10 minutes before slicing & serving.

Beef & Feta Stuffed Bell Peppers

A hearty and flavorful dish that combines the savory richness of beef with tangy feta cheese.

Ingredients:

  • 4 large bell peppers (any color)

  • 1 lb ground beef

  • 1/2 cup crumbled feta cheese

  • 1 small onion (diced)

  • 2 cloves garlic (minced)

  • 1 cup cooked rice or quinoa

  • 1 can (14 oz) diced tomatoes (drained)

  • 2 tbsp olive oil

  • 1 tsp dried oregano, salt and pepper to taste

  • Fresh parsley for garnish​

Instructions:

  • Preheat the oven to 375°F (190°C).

  • Cut the tops off bell peppers & remove seeds. Brush peppers with olive oil & set aside.

  • Drain any excess fat. In a large skillet, heat olive oil over medium heat. Add the diced onions & garlic, sauté until softened. Add ground beef, cooking until browned.

  • Stir in cooked rice or quinoa, diced tomatoes, crumbled feta, oregano, salt, pepper. Cook for a few more minutes.

  • Stuff each bell pepper with the beef & feta mixture.

  • Place stuffed peppers in a baking dish, cover with foil, bake for 30-35 minutes until the peppers are tender.

  • Remove from the oven, garnish with fresh parsley, and serve.

Baked Feta & Pomegranate Stuffed Acorn Squash

Ingredients:

  • 2 acorn squashes, halved and seeds removed

  • 1/2 cup crumbled feta

  • 1/2 cup cooked quinoa

  • 1/4 cup pomegranate seeds

  • 2 tbsp olive oil

  • Salt and pepper to taste

Instructions:

  • Preheat the oven to 400°F (200°C).

  • Drizzle olive oil over halved acorn squash & season with salt, pepper. Roast for 30-35 minutes until tender.

  • In a bowl, mix the cooked quinoa, crumbled feta, pomegranate seeds.

  • Once the squash is ready, stuff each half with the quinoa- feta mixture, drizzle with honey, and bake for another 10 minutes.

Ingredients:

  • 1 cup cream cheese (softened)

  • 1/2 cup crumbled feta cheese

  • 1/4 cup honey (plus extra for drizzling)

Instructions:
